I am having problems with using GTK4 Flatpak apps. The text appears to be (mostly) the same color as the background and icons are missing. Sometimes the desktop shows through (as iff the background didn’t render).
If I highlight text, I can see it. This is the Flatpack “gtk4-demo”
Before we do further random guesses, could you give us more info about your system ?
Is it a older Fedora you updated ? Or a brand new installation?
GTK3 has been replaced lately with GTK4. In some older constellations of setups there is just a missing GTK4 Folder and the CSS. You might have to check on your HD and do more searches in ask section. I can remember that this way we could help someone. Just do not find the Topic.
For flatpak there could be just a missing alias/variable who points to GTK3 instaed of GTK4 ?!

I do see that you must have German roots. I do write flatpak always wrong too (with “ck”). So if you added a flatpak variable please check the spelling.

I’d say it was definitely Nvidia driver related EXCEPT it works OK on the stock RPM. The problem is only on the Flatpak. Possibly there should be some Nvidia driver library in Flatpak that is wrong.
