Does anyone know of a project involving using Fedora IoT as an alternative to something like OpenWrt for a home router? I’m already using Silverblue as my daily driver and the thought of having my own router running Fedora IoT appeals to me for a number of reasons. Is this a crazy idea or does it have legs?
TurrisOS uses btrfs snapshots and atomic updates. It is based off OpenWRT but highly advanced.
You can use blue-build do build your router image, just need drivers for some components possibly. Maybe not.

You might want to give Fedora CoreOS a try as well.
I did a search for “Build a router in Linux”
and came up with many tutorials. The first one from Baeldung (a site I have found great tutorials on) is Setting up a Linux Server as a Router | Baeldung on Linux
So yes, you can do it!
