I want to change:
- the font (to IBM Plex Sans)
- the icon theme (to Papirus-Dark)
- the cursor theme (to Phinger-cursors-dark)

Customize your own profile while monitoring dconf changes:
dconf watch /
That should provide you the paths and keys to modify.
Then apply the collected settings for the GDM profile:
