What does this mean for the system? Is the way it boots actually changing, and is there anything I need to know about new or different functionality?

Fedora Atomic Desktops do not currently default to using containers for updates, but the classic OSTree model. At this point, bootc
has limited functionality unless you use the unofficial experimental Bootable Containers images. You may find What’s new for Fedora Atomic Desktops in Fedora 41 - Fedora Magazine informative.
So at this point, the biggest change seems to be that the bootloader can now be updated.
Not sure if I’m right, or if it’s entirely a cosmetic change at this point.
