If you are running F30 Silverblue, this is easily done. However, assuming you are using F30 WorkStation then you could follow the directions at this link https://docs.fedoraproject.org/en-US/fedora/rawhide/system-administrators-guide/kernel-module-driver-configuration/Working_with_the_GRUB_2_Boot_Loader/#sec-Changing_the_Default_Boot_Entry. You can tell Grub2 to not set the updated kernel as default and then specify a particular kernel you want as default. Also at that topic on Grub2, there is discussion and examples of having more than the default 3 kernels available in the Grub menu.
