I do see 40.20241019.3.0 only, which is from October, when will there be a newer stable version ?

There will be no more Fedora CoreOS 40 releases and this version is no longer supported. All Fedora CoreOS streams have now been rebased (upgraded) to 41, and this is the currently maintained version.

Fedora CoreOS is basically a rolling release. Automatic updates are turned on by default, so you will be using the latest version by default. For more info, see Auto-Updates and Manual Rollbacks :: Fedora Docs.

As @hricky said, updates should be automatic and you must know that during the end of year hollidays, releases moves from 2 weeks to 3 weeks delay
