I returned to the 100% option since fractional scaling (e.g. 125%/150%/175%) in Gnome is experimental and appears to increase system resource usage. 200% is vastly overly large for my preferences.
Enabling ‘large text’ in the Gnome ‘accessibility’ settings provided a quite sensible default while 100% without any scaling is presumably mostly unusable to most users. I edit the font and UI size in applications when needed.
