Two days ago my taskbar and Application Launcher crashed. Since that meant I couldn’t access the power options (I had just planned to shut it down), I force rebooted it. And since then, my desktop’s stuck in this really small resolution:
Looking at the Display & Monitor settings, I have no idea how to fix this.

You seem to have lost the EDID from the monitor.
Check the cable is connected correctly.
Maybe try a different cable.
I reconnected the cable a few times, and eventually it got fixed. I assume this is the solution.
This often means there is a broken wire that doesn’t make reliable contact, but can also be a worn connector. Inspect the cable for visible damage. Particularly if you are in a hot, humid location consider using “contact enhancer” (now sold by auto parts stores due the number of connectors used in modern vehicles).
