I figured it out
So the issue was that I applied Breeze Dark from the colors section which doesn’t change the Icon variant to Breeze Dark leading to the broken icons if Breeze Light icons are enabled in Breeze Dark and vice versa
Changing it via Quick Settings changes the icon theme accordingly, but I think that changing the stock colors should also automatically switch the icons to that color unless the user changes it themselves.
This could be another solution if the icon theme is correct and it still presists, but a lot of people use the toolbar.
