I think you will need to use ‘custom’ partitioning.

No you can’t do that you need use custom partitioning to achieve that what you want.Anyway installer will need /boot that mean you need to select that partition for must .![]()

Out of curiosity, what will you do to replace boot? I would have thought it was needed?

If the root partition is unencrypted, /boot can just be a directory in it, it doesn’t need to be a separate partition.
With encryption I believe it’s still possible to do without a /boot partition, but more awkward.
