My main hard drive is /dev/nvme0n1
It contains 3 partitions, one of which is /dev/nvme0n1p3 (the other two being EFI and /boot)
/dev/nvme0n1p3 is LUKS encrypted, and contains /dev/mapper/vgkubuntu-root and /dev/mapper/vgkubuntu-swap_1.
/dev/mapper/vgkubuntu-root contains Ubuntu 20.10
Can I have Fedora 34 in double boot on this setup?
I would like it to be encrypted as well, ideally inside /dev/nvme0n1p3. Ideally GRUB would let me choose between Ubuntu and Fedora

I will recommend you to test your intended setup in a Virtual Machine to be sure.

What do you mean “separate drives for each OS”?
Physical separate hard disks?
I only have two: one with the OS and one with data.
The OS one contains encrypted Ubuntu 20.10

It sounds like you want to put it on an already encrypted partition? I am not even sure if this is possible. I think it would be easier to just have two separate hard drives and encrypt each OS separately.
